Jorge Bubica - Dessert Grapes - Raisins
Our company is located in the province of San Juan, in the Central-Western area of the Republic of Argentina. Due to its extension and geographic location, our country possesses all climate and soil variants. San Juan enjoys exceptional climate conditions for vine growth; more than half of its cultivated lands have been devoted to this production. The oasis, where fruit, wine, and garden activities are carried out, are valuable resources of production. The climate is arid and dry with scarce rains. Annual rain figures are very low. The sun is very hot and there exists an important temperature variation between day and night. The highest temperatures registered in the province go above 45ºC in summer, and the lowest go below -6ºC in winter. During latter there are many frosts and when cold governs.
San Juan is geomorphologically structured by a series of mountain ranges, most of them with a North-South direction from different geological times. Among them there are low areas or flat longitudinal valleys formes by modern sediments. Two third parts of San Juan relief are mointainous. To the West, the peaks of Los Andes Cordillera eternally covered with snow can be seen. Among these heights longitudinal valleys appear and Pre- cordillera continues from North to South. The Western border of these heights allow the union of the waters which come down from the Main and Front cordilleras giving rise to Jachal and San Juan rivers. These allow the formation of oasis, where fruit, viticultural and horticultural activities are developed, which constitute valuable sources of production. In fact, through the nutritious water of San Juan River, our vineyards receive the necessary irrigation to yield an excellent product.

The origins of our company trace back to 1927 with the arrival of the Croatian immigrant Jorge Bubica. Once settled down in the province of San Juan and driven by his passion for wine cellars and vineyards, he devoted to grape growing, an activity which he would performed for forty years.
In 1967, Jorge Bubica Junior, heir of his father's passion, gave the company a boost with the re-conversion of
high quality varietals; and so starting with the production of the first raisins as well as with the incorporation
of the first varieties of dessert grapes, with some of which he was the pioneer. Nowadays, he continues
controlling the development and growth of each of the bunches of our vineyards.
Presently, we continue enlarging our cultivations and facilities, incorporating high technology to our
production, elaboration and processing systems. All this enable us to reach the different markets of the
world with products in optimum conservation, presentation and flavour conditions.
All our finished products come from grapes from our own production, which are harvested in the most convenient time of the year for each destination and under strict standards of selection and preparation for sale.
All of our products come from grapes of our own vineyards, which are picked in the most appropiate season for each destination and under selection and packaging standards. Our raisins and dessert grapes are top quality and they are intended to meet the most demanding local and international markets.
Dessert grapes
Our vineyards are carefully controlled on every stage of
growth and development. In this way, when the
bunches reach the optimum size, colour, and ripeness,
we proceed with the harvest. The harvest is carried out
manually and the grapes are placed in boxes and
taken just some metres away, where our packaging
plant is.
The packaging plant has the necessary conditions to
keep the bunches fresh during the packaging and to
ensure that they get to destination in optimum
conditions.
There, each bunch is submitted to a strict quality control and all the grapes, which may not have a completely uniform colour, or which may have any other sort of defect, are manually eliminated. The bunches are weighted and packaged; and then, they are immediately taken into the pre-cold chamber; and then, into the cold chamber and/or into the refrigerated truck or container which will take them to their destination.

The grapes are harvested with the optimum degree of ripeness so as to get excellent raisins. Immediately after that, they are taken to the drying area and spread on grids on big boulders. Bunches are sun dried in a completely natural way, and they are regularly manually rotated so that the process is carried out evenly on every grape. It is essential to reach a completely healthy product; in this process, the intense sunlight and the scarce humidity, which characterise the area, have a great influence. The evaporation of the water in the grapes rapidly reaches a point, which prevents the development of fungi and bacteria.

Once the grapes reach the ideal humidity level, they are taken to conservation chambers, where they are kept in perfect humidity and health conditions. For every order, each batch is taken to the processing plant and the raisin comes into the processing line for its washing, selection, quality control and packaging.
